A very refreshing raw soup, best served chilled. High in fat, vitamins and minerals – very nutritious for only 6g net carbs.
- Zucchini, with skin, 300g
- Cucumber, with skin, 200g
- Red pepper, 1 small
- Celery stalks, 3
- Fresh cream min. 30% fat, 100ml
- Fresh dill, chopped, 1 tbsp
- Olive oil, 2 tbsp
- Salt and pepper to taste
Wash thoroughly all vegetables and chop them in cubes to fit your juicer.
Juice the zucchini, cucumber, pepper and celery.
Add the fresh cream and the olive oil and mix well.
Season with salt and pepper to your taste and serve with finely chopped dill.
Serve immediately, do not store.
