Raw Zucchini, Cucumber, and Celery Cream Soup

A very refreshing raw soup, best served chilled. High in fat, vitamins and minerals – very nutritious for only 6g net carbs.

Ingredients

  • Zucchini, with skin, 300g
  • Cucumber, with skin, 200g
  • Red pepper, 1 small
  • Celery stalks, 3
  • Fresh cream min. 30% fat, 100ml
  • Fresh dill, chopped, 1 tbsp
  • Olive oil, 2 tbsp
  • Salt and pepper to taste

Method

Step 1

Wash thoroughly all vegetables and chop them in cubes to fit your juicer.

Step 2

Juice the zucchini, cucumber, pepper and celery.

Step 3

Add the fresh cream and the olive oil and mix well.

Step 4

Season with salt and pepper to your taste and serve with finely chopped dill.

Step 5

Serve immediately, do not store.
