Light Zucchini Soup

A light and refreshing summer soup, full of taste for 5.75g net carbs.


  • Zucchini, 2 medium
  • Chicken stock, 1 liter
  • Onion, 1 medium
  • Chili pepper, 1 small
  • Salt and pepper to taste
  • Fresh dill, 1/2 cup
  • Olive oil, 2 tbsp


Step 1

Thoroughly wash the zucchinis, then chop them in small cubes.

Step 2

In a medium sized pot, heat the olive oil then saute the finely chopped onion and pepper.

Step 3

Add the chicken stock, season with salt and pepper to taste, and let simmer for about 10 minutes.

Step 4

Add the zucchini and simmer until it is tender. Cooking time may vary depending how tender you like it.

Step 5

Remove from the stove and add the finely chopped dill. Can be served hot or chilled.
