A yummy treat that is very keto-friendly, at only 2.7g net carbs.

Ingredients

  • Eggs, whites, 5
  • Protein powder, low carb (under 3g carbs per serving), 125g (5 scoops)
  • Mascarpone cheese, 350g
  • Dark cocoa powder, unsweetened, 25g
  • Espresso, 6 shots
  • Liquid sweetener, 25 drops

Method

Step 1

We start by preparing the base of the cake:

Step 2

Beat the egg whites in a large mixing bowl.

Step 3

Incorporate 75g of the protein powder (chocolate flavor would be the obvious choice) and 20g cocoa powder into the beaten eggs.

Step 4

Incorporate 150g of the mascarpone cheese and 10 drops of liquid sweetener, mix well.

Step 5

Pour the mix on a 25cm non-stick baking tray or a tray lined with baking paper. Bake in a preheated oven at 170 degrees C (335 degrees F) for about 15-20 minutes, then let cool.

Step 6

Next, we prepare the topping:

Step 7

Blend well the remaining mascarpone (200g) with 50g protein powder (vanilla flavored) and 10 drops of liquid sweetener.

Step 8

Assemble the cake: divide the cake base in 6 and place each piece into a glass bowl, then soak with the espresso sweetened with 5 drops of liquid sweetener (1 shot per bowl). Add topping equally into each bowl.

Step 9

Serve immediately or refrigerate overnight for a chilled version. Decorate with the remaining cocoa powder before serving (use a fine strainer to sprinkle the cocoa evenly).
