A quick, easy, very filling breakfast – 1g net carbs per serving!
- Eggs, whole, 2
- Butter, 30g
- Mascarpone, 1 tbsp
- Salt and pepper to taste
Hard boil the eggs, using a pinch of salt in the pot - this will help the eggs peel better once they're done.
Wash the boiled eggs quickly with cold water, then peel and chop them into a large cup.
Add the butter and the mascarpone cheese while the eggs are still hot, mix well, then add salt and pepper to taste.
