Cauliflower is an often-forgotten pantry gem, though it can be delicious and filling. It is also a very good source of vitamins (C, K, B6) and this dish will only set you back 5g net carbs!
- Cauliflower, medium sized head, 1
- Créme fraîche, 3 tbsp
- Eggs, whole, 2
- Grated cheddar cheese, 50g
- Garlic, cumin seeds, hot chilli, salt, black pepper to taste
- Water, 1.5l
- Olive oil, 1 tbs
Preheat oven to 200 degrees C (390 degrees F)
Bring the water to boil in a large pot, together with all spices.
Split the cauliflower head into small buckets and throw them into the boiling water - let simmer for 3 minutes, then remove them from the water and drain them.
Grease a baking pan with a bit of butter or oil, then place the drained cauliflower into the pan.
Prepare a mix of the whisked eggs, créme fraîche, and the olive oil, then pour it evenly over the cauliflower. Top with the grated cheddar.
Bake for 15-20 minutes. If you prefer a thicker, golden crust, set the oven to grill for 1-2 minutes at the very end. Serve hot or fridge chilled.
