Delicious and nutritious buns with under 1g net carbs per bun.
- Butter, 30g
- Eggs, whole, 4
- Grapeseed oil, 4 tbsp
- Walnut oil, 1 tbsp
- Almond flour, 35g (3tbsp)
- Goji berries, dried and ground, 20g (2tbsp)
- Flaxseed, ground, 1 tbsp
- Cooking cream, 35% fat, 60g
- Liquid sweetener, 1 tbsp
- Baking powder, 1 tsp
- Pinch of salt
Preheat oven at 180 degrees C (350 F).
Beat well the eggs with an electric mixer, in a medium to large bowl.
Incorporate the oil into the eggs, 1 tablespoon at a time, and continue whisking. You can replace both the grapeseed and the walnut oil with any other oil you prefer.
Incorporate the cream into the mix, 1 tablespoon at a time, and continue whisking.
Add the melted (but not hot!) butter into the mix, making sure it is thoroughly incorporated into it, then the liquid sweetener at the end.
Add the mixed dry ingredients (almond flour, goji berries, flaxseed, baking powder, pinch of salt), one tablespoon at a time, and mix gently by hand.
Pour the dough into a non-stick cup bun tray: should fill 10 - 12 cups, depending on the size. Our nutrition calculation is made for 10 cups.
Bake for about 15 minutes or until the top becomes golden. The cups will deflate a little once they're removed from the oven. Serve hot, refrigerate any cups left.
